Carmel is darker, longer and more wrinkled surfaces compared to Nonpareil. They are prepared from whole, sweetened almonds.
Nonpareil are readily blanched (skin removal) and sliced and cut for processed forms. Nonpareil almonds have a smooth surface and are long and flat. Because of the way it looks, it is one of the most popular types of almonds. Its smooth kernel, thin outer shell, and absence of flaws make it an excellent choice for snacking nuts and other applications where a pleasing look is essential.
Sonora has a smooth surface, long, narrow shape, and is light in appearance. Sonora Inshell are considered very desirable, and are known for their paper shell and high crack-outs.
Monterey almonds reach their full maturity late, yielding enormous, elongated nuts. The kernels are protected by a delicate, tightly-sealed shell and have excellent flavour.
